When done and the oven is at the desired temperature, it is then baked until the tomatoes collapse.

Separately, another pan must be heated where the pancetta must be cooked to a crisp and then transferred to a plate.

Then, heat the remaining oil and place the spinach on it to cook until it wilts. Season it with salt and pepper then set it aside. The third part is to spread the remaining oil on the sliced bread.

Barbecue the bread for approximately one minute or until it is toasted on both sides. Finally, you may now spread the ricotta over the toasted bread and proceed to add the spinach, tomatoes, mushrooms and pancetta making it ready to be enjoyed.
